Jerk Chicken




One of the things I love about being a mom - is teaching my kids to cook.. Today I taught Kara, my youngest how to cook my famous Jerk Chicken - I have shared this recipe before - but seriously people, if you haven't cooked it up - you are missing out on tingling your taste buds. It's really that good!
Jerk Chicken
  • 1-2 pounds boneless chicken breast
  • 1 envelope good seasonings - I use the generic, tastes exactly the same
  • 1/4 cup oil
  • 1/4 cup red wine vinegar
  • 1 TBSP soy sauce
  • 1 TBSP cinnamon
  • 1 tsp all spice
  • 1 tsp thyme
  • 1/4 -1/2 tsp red pepper
Marinate 1/2 hour or longer and grill - I make an additional batch of the sauce for dipping.
Serve with white rice and enjoy..

Love cooking with the kids. Its fun. I have a question about how spicey that recipe is.....I like my food pretty spicey. What do you think?

Great Question, Chris - it's a spicy as you want it to be. I use 3/4 tsp red pepper in the marninade but a little over a tsp for the dipping..
