Pozole - July Recipe


IT'S NOT TOO LATE TO SEND ME YOUR FAVORITE RECIPE!!!

Pozole

1/2 lb boneless skinless chicken breast
1 large tomato, diced
1 small yellow onion, diced
1/2 tsp garlic powder
1 tbsp vegetable shortening
1 14 oz can white hominy

Toppings

3 tbsp dried oregano leaves
1/2 onion chopped
1/4 head shredded white cabbage
1/4 bunch chopped cilantro
2 limes

In a medium pot place chicken and enough water to cover, add salt, garlic power and cook over medium heat until tender. Drain water, shred chicken and set aside. In a skillet add 1 tbsp of shortening, onions, and tomatoes. In a medium pot add hominy, 4 cups of enchilada sauce and 1 cup of water, bring to boil. Add chicken and simmer for 5 minutes. Garnish with diced onion, shredded cabbage, cilantro, and lime.
