Deep Fried Ice Cream with Bunuelos


This yummy treat is Always a winner - (very easy -a little less fattening than the "traditional" recipe) Try it out - You'll Love it!!! I promise....

Deep Fried Ice Cream

1 pint vanilla bean ice cream
2 bricks Mexican Ibarra Chocolate
bunelos - recipe below
1 can whip cream
4 cherries

Melt chocolate in small saucepan with two tablespoons of water over low heat. Blend chocolate until smooth. Place bunelos around the ice cream dish. Add ice cream and pour chocolate over top... Add whip cream and a cherry...

Bunuelos

3 flour tortillas
1 cup sugar
1/4 cup cinnamon
1/4 cup vegetable shortening

In a skillet add vegetable shortening over medium high heat. Cut tortillas into triangles and fry until golden brown. Remove from skillet and place on a paper towel. Mix cinnamon, sugar and sprinkle over tortillas...

Kelly's TV Guide Lasagna



It might not be really famous - but it definitely is a crowd pleaser.. I found this recipe about a hundred years ago in TV guide - remember the TV guides that were still small and easy to read -the size of a Reader's Digest? My TV guide was a trusty dear friend who was always in my mailbox by Friday... I miss my old TV guide..... Funny - nowadays I have no idea what is on unless I see a show advertised....

Kelly's TV Guide Lasagna

Note: I used to boil my noodles but now I use the no boil noodles and they work every time.

Preheat oven 375 degrees

Ingredients:

1 pound mild Italian sausage - you could use beef if you like - I just like sausage
12 noodles cooked or uncooked.
1 large container of Ricotta Cheese - about 16 oz
2 1/2 cups shredded mozzarella cheese
1/2 cup Parmesan cheese
2 eggs
1 large jar of Ragu Old World Style Spaghetti Sauce - 26 oz - any sauce would do - I like Ragu

Brown the sausage



Add Spaghetti sauce to sauce and simmer.




Combine ricotta, 1 1/2 cups mozzarella, 1/4 cup Parmesan cheese and eggs in bowl.



Spread 1 cup of meat mixture in 13x9 baking dish. Layer 4 noodles, then 1 cup of meat sauce, 1/2 of the Ricotta mixture; repeat. Top with remaining 4 noodles and the rest of the sauce. Cover tightly with aluminum foil back 1 hour.







Remove foil and sprinkle with remaining cheeses. Bake uncovered for 10 minutes. Let
stand a few minutes. Enjoy!

Jerk Chicken




One of the things I love about being a mom - is teaching my kids to cook.. Today I taught Kara, my youngest how to cook my famous Jerk Chicken - I have shared this recipe before - but seriously people, if you haven't cooked it up - you are missing out on tingling your taste buds. It's really that good!
Jerk Chicken
  • 1-2 pounds boneless chicken breast
  • 1 envelope good seasonings - I use the generic, tastes exactly the same
  • 1/4 cup oil
  • 1/4 cup red wine vinegar
  • 1 TBSP soy sauce
  • 1 TBSP cinnamon
  • 1 tsp all spice
  • 1 tsp thyme
  • 1/4 -1/2 tsp red pepper
Marinate 1/2 hour or longer and grill - I make an additional batch of the sauce for dipping.
Serve with white rice and enjoy..

Stuffed Shell Manicotti


This is one of my favorite recipes to make and it is very very yummy - Be sure to send me a comment on how you like it..

Ingredients
  • 8 oz cream cheese - room temp
  • 2 eggs
  • 8 oz Mozzarella, shredded
  • 2 TBSP. chopped parsley
  • 1/2 tsp. salt and a dash of pepper
  • 1 package manicotti noodles
  • 2 TBSP Parmesan cheese
  • 1 can or bottle of your favorite spaghetti sauce - I use Old World Ragu..
Preheat oven 350 degrees. Blend cream cheese and eggs in a bowl until very smooth - no lumps. Stir in Mozzarella cheese, parsley, salt and pepper. Mix together. Stuff each shell with the cream cheese mixture. Coat the bottom of a 13 x 9 pan with Pam spray and then lightly coat the pan with your favorite spaghetti sauce (about 3/4 cup). Arrange shells over sauce in one layer. Pour remaining sauce over the shells. Sprinkle Parmesan cheese. Bake 20-25 minutes or until the shells are heated completely through..

** For added flavor - I will add cooked broccoli along with the shells covered in sauce.. yummy

Special "K" Bars - July Recipe #2




IT'S NOT TOO LATE TO SEND ME YOUR FAVORITE RECIPE!!!

Special K Bars - A Favorite Sent To My Daughter by Her Great Aunt Audrey

1 Cup White Sugar
1 Cup White Syrup
2 Tablespoons butter

Mix in pan and set aside

5 cups Special K (set aside)

1 cup Peanut butter (set aside)

Bring syrup mixture to a rolling boil. Remove from heat and stir in the cup of peanut butter. Pour over 5 cups of Special K and mix thoroughly. Pour into cake pan. Let cool...

Frosting

1 bag of butterscotch chips
1 bag of chocolate chips



Frost with 1 package of butterscotch chips and 1 package of chocolate chips. Melt chips in microwave oven. It takes about one and a half minutes in my microwave. Check after one minute and then return them to oven for a few seconds. Stir and spread on bars..

Tuna Potato Chip Casserole


This was a favorite of my husband's growing up.... It's a easy and fun recipe.

3 regular sized cans of tuna packed in water - I like albacore - personally
2 cans Cream of Mushroom soup
1/2 cup of regular milk - (non fat just tastes watery to me with this recipe)
1 regular can green peas
2 cups potato chips - crumbled.

Combine everything and top with the chips

Bake in oven at 350 for twenty to thirty minutes (until it starts to bubble)

Let sit for a couple of minutes and voila....

Chicken Cheese Casserole



Chicken Cheese Casserole

This is one of my All Time Favorites.

6 Whole boneless Chicken breasts (or 1- 4lb chicken)
2 10-oz pkg. Frozen whole broccoli
2 Cup milk
2 8 oz pkg. cream cheese
1 tsp. salt
1 tsp. garlic salt
1 cup Parmesan cheese
1/2 cup mozzarella cheese

Cook chicken until tender. (remove skin or bone if applicable) cut into pieces - refrigerate.
Cook broccoli (do not over-cook) Cut into bite size pieces. Arrange broccoli in lightly greased low flat baking dish. Over low/medium heat blend milk, cream cheese, and salt until smooth and hot. Stir in 1/2 cup of Parmesan cheese and stir until smooth. Pour 1 cup sauce over broccoli. Top with all the chicken. Cover with rest of cheese sauce. Sprinkle remaining Parmesan cheese over the top. Bake 30 minutes at 350 degrees. Remove from oven. Sprinkle Mozzarella on top and let stand 5-10 minutes covered..... and enjoy..

Left overs taste better than the first night too....

Lobster Enchiladas


This is an Awesome Dish for a party of 12-15......

2 pounds Lobster tail
2 medium tomatoes diced
1 large yellow onion diced
1 1/2 tsp salt
1 cup butter unsalted
2 doz Flour tortillas
1 tsp garlic powder
1 tsp oregano leaves
2 Tbsp olive oil
2 cups heavy whipping cream
8 oz jack cheese grated

In a large skillet heat olive oil over medium heat. Add onions and saute until tender. Add tomatoes, salt, garlic powder and oregano leaves. Saute for additional 2 minutes. Add lobster meat and cook over medium heat for 10 minutes. Melt butter in a separate medium skillet over low heat. Dip flour tortilla in butter on both sides. Fill with lobster mix and roll up. Put into a 13x9 glass pan and continue doing same with remaining tortillas. Pour whipping cream over the top. Sprinkle with cheese and bake in a 350 degree oven until cheese melts.
**optional garnish with green chilies

World's Greatest Spaghetti Sauce


1/2 lb bacon, chopped
2 1/2 lb ground beef
2 cup finely chopped onions
2 cup mushrooms
6 cloves garlic, chopped
3 cans Italian plum tomatoes (2lb3oz)
3 cans tomato paste (6 oz)
2 T salt
1 1/2 c dry red wind
5 t oregano
5 t basil
1 1/2 c water
1 1/2 c chopped parsley
2t thyme
1 bay leaf, crumbled

Fry bacon until crisp. Remove all but 2 T bacon fat, save rest. Add beef. Brown, braking up with spoon. Stir into meat, the onion,the mushrooms, ground pepper, garlic. Cook 10 minutes. Mash tomatoes, with spoon. Stir into meat. Add tomato paste, bacon crumbles, 1 c wine, 4 t oregano, 4 t basil, and all remaining ingredients. Bring to boil, Reduce heat and simmer three hours. Stir occasionally. Add more seasonings after 1 hour. This sauce freezes beautifully. When you defrost it add a little wine and seasonings to per up flavor and simmer for a while once again before serving...

Easy to Make Meat Rolls


I don't have a picture to show you...but you'll love this recipe...I promise

4 tenderized cubed beef steak..
stove top stuffing
mustard
2 TBSP oil
flour
seasoning salt
toothpicks

Preheat oven 350 degrees

Lightly season and flour the steak. Then you pound it and pound it until it's very very tenderized.
Lightly spread mustard on half of steak
Place approximately 2 TBSP of cooked stuffing on top of mustard.
Roll and cut into 1-2 inch rolls - use toothpicks to hold together
Lightly brown the meat in a skillet
Place meat rolls in shallow baking dish and bake for approx 30-35 minutes

Great Crock pot Recipe - Apricot Pork Chops


I have come to love my Crock pot. I think every mother should have one and use it often!!! The Crock pot has made it possible to feed my family and still work, take kids to and from school and tennis, and help with homework....

I ran across this recipe years ago and it has stayed a staple in our home. Please let me know how you liked it.

Apricot Pork Chops

1 pound of fresh baby carrots
4 pork chops (boneless works best)
1 large jar (8 -12 oz) of your favorite apricot or peach preserves ( I usually use apricot)

Be sure to use a non stick spray before you put the ingredients into the Crock pot.

Spread the baby carrots on the bottom of the pot and then place your pork on top of the carrots. Poor your preserves over everything. I like the glaze to be thick so I put half the glaze on in the beginning and one hour before they are done, I put the 2nd half. You can do all in the beginning if you choose. It turns out great no matter how you do it!

Cook on low for 8 hours.

My Famous Jerk Chicken



This is my family's favorite Chicken recipe. It is a staple in our menu because my husband requests it almost weekly.

4-5 Chicken breast cut into pieces 1-2 inches

1/2 cup vegetable oil

1/4 cup red wine vinegar

1 envelope of Italian salad dressing mix (I use store brand - cheaper but just as good)

2 TBSP (generous) brown sugar

2 TBSP soy sauce

1 tsp ground allspice, 1 tsp ground cinnamon

3/4 tsp ground red pepper (this will give a good kick) 1/2 tsp for mild kick

Mix all the ingredients together. Add chicken and coat well.

Place chicken on grill. I use my George Foreman knock off.. You can BBQ it or broil it. Be sure to marinade while you cook.

**I make another batch of the sauce and heat it in the microwave for extra sauce to dip or flavor the rice...

Chicken and Cream Cheese Enchiladas


My favorite Mexican restaurant is closing their doors this month. The owners decided to retire... This brings much sadness to me for the fact they make the most incredible enchiladas in the world. I have enjoyed 'The Mexican Affair's' food for well over twenty years. I order the exact same thing every time. The Palomas Blancas which are Chicken and cream cheese enchiladas. My family and I made a recent pilgrimage to Long Beach, California and discovered the impending closing of this incredible restaurant. Our food server was the owner Ruth Lopez. I asked Senora Lopez if I could have her recipe for Palomas Blancas and she said yes! So I am sharing this incredible recipe with you... Please enjoy...

Palomas Blancas (Chicken and Cream Cheese Enchiladas)
Serves 12-15

3 lbs chicken breast, cooked and shredded
12 cups water
2 tsp salt
1 tsp garlic powder
3 Tbsp vegetable shortening
1 small yellow onion, diced
1 medium tomato, diced
1/2 lb butter
1 dozen flour tortillas, medium size
8oz Ortega whole chile peppers cut into strips
8oz cream cheese, sliced thin horizontally
8oz grated jack cheese
2 cups heavy whipping cream
14.5 oz can black olives, sliced

In a large pot with water, boil salt, garlic and chicken until tender and shred, set aside. In a large skillet heat vegetable shortening, add diced onions and saute until tender. Add diced tomatoes and simmer for one minute. Add chicken and cook for about 5 minutes over medium heat.
In a medium skillet melt butter on low heat. Coat all flour tortillas with butter on each sided.
Preheat oven to 350 degrees. Now you are ready to assemble your first paloma. In the center of the tortilla add 2 Tbsp of the chicken, now add 4 strips of the Ortega pepper and 2 strips of the cream cheese. Take each side of the tortilla and fold ends first, then fold to the center loosely. Place the palomas in a shallow baking pan. Top with jack cheese and pour heavy whipping cream over each paloma. Bake for 15to 20 minutes. Now top with green onions an black olives...

Gourmet Meat Loaf


This is a family favorite. I've been making this for 20 years and the husband and kids still love it!!

Gourmet Meat Loaf

Ingredients:

2 lbs ground meat
1 C fine dry bread crumbs (I use Italian)
1/2 C sour cream
2 eggs, beaten
2 tsp salt
1/4 tsp thyme
3 oz can chopped or sliced mushrooms
2 TBSP Parmesan cheese
1 TBSP Chopped onion (dried is okay)

Preheat oven 400 degrees

Combine all ingredients and shape into loaf. Place in shallow roasting pan for about 55 minutes.

Many times, I have cut the recipe in half and put into a loaf pan for fewer people/leftovers. Cooking time is still 55 minutes....

Cider Braised Pork Loin Chops


Don't laugh at the picture..Not the best in presentation...but tastes really good!

This is a really good and easy recipe... It takes very little time

Ingredients
6 Medium pork loin chops about 1 inch thick
Lawry's seasoned salt
2 Tbsp butter
2 Tbsp oil
2 leeks, trimmed and thinly sliced
2 celery rib, chopped
3/4 c apple cider
1 bay leaf

Season with Lawry's and tenderize the pork by lightly using a fork

Melt butter AND oil in large skillet over med-high heat

Add pork and cook until brown, about 2-3 min per side - take pork out and set aside

add leeks, celery, and bay leaf to skillet, saute until tender

Add cider and boil for approx. 2 minutes

Return pork and any juices to skillet.

Cover and Simmer just until cooked completely in approximately 5-8 minutes

Remove bay leaf.. and enjoy.
