Enchilada Sauce - July Recipes


IT'S NOT TOO LATE TO SEND ME YOUR FAVORITE RECIPE!!!

Great Enchilada Sauce - for the Pozole or your favorite enchiladas

9 dry pasilla chiles cleaned, seeded and stemmed
1 tbsp sugar
1 tbsp salt
1/2 tsp garlic powder
1 1/2 cups flour
1 tbsp chicken base
2 tsp oregano
1/2 tsp ground cumin
3 tbsp vegetable shortening
6 cups water


In a pot boil chiles in 2 cups of water until tender for about 15 minutes. Drain water and rinse chiles with cold water. In blender combine chiles with sugar, salt, garlic, flour, chicken base, oregano, cumin, and 2 cups of water and puree. In a large pot heat vegetable shortening, add the puree from the blender with 2 cups of water. Stir and bring to a boil and lower heat to simmer and continue stirring for about 20-25 minutes. Remove bubbles as they form on the top with a spoon and discard... ( I put in the refrigerator overnight and reheat the next day - I think it tastes better- either way it's an awesome sauce.

Pozole - July Recipe


IT'S NOT TOO LATE TO SEND ME YOUR FAVORITE RECIPE!!!

Pozole

1/2 lb boneless skinless chicken breast
1 large tomato, diced
1 small yellow onion, diced
1/2 tsp garlic powder
1 tbsp vegetable shortening
1 14 oz can white hominy

Toppings

3 tbsp dried oregano leaves
1/2 onion chopped
1/4 head shredded white cabbage
1/4 bunch chopped cilantro
2 limes

In a medium pot place chicken and enough water to cover, add salt, garlic power and cook over medium heat until tender. Drain water, shred chicken and set aside. In a skillet add 1 tbsp of shortening, onions, and tomatoes. In a medium pot add hominy, 4 cups of enchilada sauce and 1 cup of water, bring to boil. Add chicken and simmer for 5 minutes. Garnish with diced onion, shredded cabbage, cilantro, and lime.

Special "K" Bars - July Recipe #2




IT'S NOT TOO LATE TO SEND ME YOUR FAVORITE RECIPE!!!

Special K Bars - A Favorite Sent To My Daughter by Her Great Aunt Audrey

1 Cup White Sugar
1 Cup White Syrup
2 Tablespoons butter

Mix in pan and set aside

5 cups Special K (set aside)

1 cup Peanut butter (set aside)

Bring syrup mixture to a rolling boil. Remove from heat and stir in the cup of peanut butter. Pour over 5 cups of Special K and mix thoroughly. Pour into cake pan. Let cool...

Frosting

1 bag of butterscotch chips
1 bag of chocolate chips



Frost with 1 package of butterscotch chips and 1 package of chocolate chips. Melt chips in microwave oven. It takes about one and a half minutes in my microwave. Check after one minute and then return them to oven for a few seconds. Stir and spread on bars..

July Recipe #1

Grape Salad

3 lbs Red Grapes
3 lbs Green Grapes
8 oz Cream Cheese
8 ox Sour Cream
1/2 Cup Sugar

Topping:
1/2 Cup Brown Sugar
4 Large Butterfinger Candy bars, crushed
1/2 Cup any nuts (optional)

Rinse red and green grapes, and combine in baking pan.
Then mix cream, sour cream, and sugar, blend well.
Spread mixture over grapes.
Then blend topping and layer over the grapes
Refrigerate until ready to serve...
