Warm Thai Chicken Salad

One of my favorite recipes...

1 TBSP vegetable oil
1 Clove garlic, finely chopped
1 Jalapeno chili, seeded and finely chopped
1 LB boneless skinless chicken breast halves, cut into 1/2 inch strips
1 Large bell pepper, cut into 1-inch pieces
1 Medium cucumber, cut length-wise in half then crosswise into 1/4 inch slices - 2 cups
2 Green onion, sliced
1/4 Cup lime juice
2 TBSP soy sauce
1 TBSP chopped fresh cilantro
2 TSP sugar
1/4 TSP pepper
Lettuce - your choice... I like Romaine
1 Cup dry roasted peanuts
1 Lime

Heat oil in skillet or wok over medium-high heat. Cook garlic and chili in oil 30 seconds, stirring frequently. Stir in chicken. Cook, stirring occasionally, until chicken is no longer pink in center. Add bell pepper, cucumber and onions; toss with chicken mixture. Stir in remaining ingredients except lettuce. Heat to boiling, stirring constantly; boil and stir 30 seconds. Remove from heat.

Divide lettuce among 4 plates. Spoon chicken mixture over lettuce, using slotted spoon. Drizzle liquid from skillet over chicken mixture and lettuce. Garnish with dry roast peanuts and lime slices...

I have a roast in the crock pot.... Not sure why... I don't particularly care for pot roast... or any kind of roast for that matter... I do have a husband and kids to feed.. The kids are not fans either... not sure if the hubs is - mostly because it's not something that I typically cook... Lately we have been dining on "what you can find in the kitchen before anyone else finds it"... This meal has been a common occurrence lately due to mom being too busy to cook - the kids are too busy to eat dinner at the same time - and the husband is out of town more often than he is home... But tonight everyone will be here by 6:30 PM and we will sit down at the table together with plates, napkins, utensils, and conversation....

So tonight it's pot roast - I was walking through the grocery store this morning in search of something to make for dinner.. something that I don't have to spend too much time making...
I saw the big chunk of meat and voila... dinner was found... The meat also came with a little popper thingy that I can put into it to make sure I cook it correctly... that's a good thing...

Rump roast
2 large carrots
2 onions cut in half
3 red potatoes
1 parsnip (can't stand them - but the husband seems to like - yuck)
1 packet of savory pot roast mix....

crock pot it for 8 hours....

My eldest made homemade bread from scratch yesterday - if there is any left we can use it to sop up the gravy/juice....

Can't Stand Bad Drivers!!!

One of my biggest bed peeves is bad drivers... You know the ones who pull into traffic super fast to get in front of you then proceed to drive 10 miles below the speed limit?... Or the one that stops 2 car lengths from the crosswalk at a red light... or how about the one who just sits there with the green arrow and after honking continuously to move he suddenly notices the turn signal right before it changes - leaving you stuck for the next green?? Aren't these drivers fun??

Nothing turns my potty mouth on more than dealing with bad drivers... When my kids are in the car - I try to be good... I really try... I call bad drivers Bubba.. It helps me from calling them something else.... My kids will often hear phrases like... "What the heck, Bubba?"... "Oh no you don't ~~asssssho~~Bubba?" I'm thinking you are getting the picture?

This video was sent me the other day and I had to laugh.. Mostly because it could have been me....

This yummy treat is Always a winner - (very easy -a little less fattening than the "traditional" recipe) Try it out - You'll Love it!!! I promise....

Deep Fried Ice Cream

1 pint vanilla bean ice cream
2 bricks Mexican Ibarra Chocolate
bunelos - recipe below
1 can whip cream
4 cherries

Melt chocolate in small saucepan with two tablespoons of water over low heat. Blend chocolate until smooth. Place bunelos around the ice cream dish. Add ice cream and pour chocolate over top... Add whip cream and a cherry...

Bunuelos

3 flour tortillas
1 cup sugar
1/4 cup cinnamon
1/4 cup vegetable shortening

In a skillet add vegetable shortening over medium high heat. Cut tortillas into triangles and fry until golden brown. Remove from skillet and place on a paper towel. Mix cinnamon, sugar and sprinkle over tortillas...

Look at the picture above and you can see where this driver broke through the guardrail, on the other side of the culvert, where the people are standing on the road pointing... the pickup was traveling about 75 mph from right to left when it crashed through the guardrail. It flipped end-over-end bounced off and across the culvert outlet and landed right side up on the left side of the culvert, facing the opposite direction from which the driver was traveling. The 22 year old driver and his 18 year old passenger were unhurt except for minor cuts and bruises.. This was just outside Flagstaff, AZ on U.S. Hwy 100

18 Weeks To Go Till We Go East

So last night I was in the family room surfing the net on my IPAD while studying for my broker exam, watching TV with the husband, and chatting with the kids.. I was looking for things to do on my Mom and Daughters East Coast trip of a lifetime this Summer.... So far - I have DC planned... Lots and lots to do - Very excited... Still working on the NYC things to do list.... And last night I found a tour that my kids would LOVE... My oldest daughter is into paranormal stuff.. AND I found the ultimate tour - Haunted Footsteps Ghost Tour in Salem, MA.. It's a night tour - which is perfect!!!! We will most likely take the Cemetery tour also - that tour is in the daylight... I am calling to today to make sure it still is open for business -Wish me Luck!

Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if you want a stronger taste of garlic ( I love garlic, sorry Dusty)

Heat up left over pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. this keeps the crust crispy. No soggy micro pizza.

Expanding Frosting - When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount.. You also eat less sugar and calories per serving.

Newspaper weeds away - Start putting in your plants, work the nutrients in your soil. Wet newspapers, put layers around the plants overlapping as you go cover with mulch and forget about weeds. Weeds will get through some gardening plastic they will NOT get through wet newspaper.

Broken Glass - Use a wet cotton ball or Q-tip to pick up the small shards of glass you can't see easily.

No More Mosquitoes - Place a dryer sheet in your pocket. It will keep the mosquitoes away!

Candidate 1 - She spent the $5000 on a complete makeover.. she had her hair done.. new makeup. Bought several new outfits and dressed up very nicely for the man.. She tells him that she has done this to more attractive to him because she loves him so much... The man is Impressed...

Candidate 2 - She went shopping and bought the man gifts.. She bought new golf clubs, some new gizmos for his computer, and nice expensive clothes for him.. As she presents the gifts, She tells him that she spent all the money on him because she loves him so much... Again the man is Impressed...

Candidate 3 - She invests the money in the stock market. She earns several times the $5000. She gives him back his $5000 and reinvests the remainder in a joint account. She tells him that she wants to save for their future because she loves him so much.. And again the man was obviously very Impressed...

So the man thought for a long time about each woman and what she had done with the money he had given her... Then he married the one with the biggest boobs...

On a side note.... There is more money being spent on breast implants and Viagra today than on Alzheimer's research. This means that by 2040, there should be a large elderly population with perky books and lasting erections and absolutely no recollection of what to do with them.... I'm just saying....

Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster....

Store your opened chunks of cheese in aluminum foil. It will stay fresh longer and not mold.

Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.

Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking.

For a yummy treat - make brownies as directed. Melt Andes Mints and pour over warm brownies...

We have solar panels on our roof... They heat the water in our home and the pool in the summer... The solar is turned off because it's Winter... But somehow the panels broke and we have a Niagara falls sized waterfall right outside our back door... Solar guy can't come out until tomorrow...

The filter for our pool is also leaking... There are 3 leaks springing from a crack... The pool guy can't come out until tomorrow... yep, he's the same guy for the solar...

While I was standing in the backyard looking at the leaks and getting annoyed... Our waterfall came on... It reminded me that I'm still very lucky...

This little guy came out to visit us last weekend - We have several generations of alligator lizards living with us...

Braces Time

It's time for the kids to get pretty teeth... I'm sure they will be happy.. in about 2 years... We started this "adventure" last March but the husband had been laid off and now he's back to work and Now the ~~torture~~ fun begins...

I had no idea how much goes into getting braces on.. And of course the girls are now hearing from their friends that it is a painful process.... I was hoping that they would learn on their own that there is nothing to it.... Easy for me to say - I never had braces...

Nikki - Treatment is as follows...
1. Place comprehensive edgewise orthodontic appliances supported with a transpalatal arch to align teeth properly.
2. Removal of primary tooth #C - I'm thinking this won't be fun...
3. Surgically uncover the maxillary right cuspid #6, direct bond bracket and attach gold chain (huh?) to assist in orthodontic forced eruption... ( I really don't like the way that sounds... forced eruption... ouch...)
4. Utilize a facial orthopedic appliance with a high-pull headgear to correct/improve Class II dental and skeletal relationship.... (high-pull?)
5. May need a temporary orthodontic anchor screw(s) to facilitate leveling and alignment of the teeth.
6. Later, will need to remove the 3rd molars due to lack of adequate space for their eruption and function
7. Placement of maxillary and mandibular retainers at the completion of active orthodontic treatment: to be worn full time for 9 months, then reduction to part time - wear indefinitely... as in like forever?

Kara's treatment not so intense...

She has the same as Nikki EXCEPT the tooth removal... the surgical removal with the fancy gold chain... nor screws... I'm guessing she's a little luckier..

In the End they will both look more Fabulous!!!!

Dieting - Me and Dance 2......

Okay Day 1 - I was good... Day 2 - and Day 3 - I took a break.... Now day 4 - I'm back on track... I have no idea why I took that 2 day detour - especially since I just started.. Any hoo - the detour was not too bad...

Now to add some kind of exercise to my daily routine... hmm... Because I have Lupus (or maybe because I am overweight) my joints are not in the best shape... I can no longer jog or run for long distances.. I can walk.. So I will do that... But I want to do something more.... Okay - I can ride my bike... And I could go to the Club - we only pay an arm and leg to be members..... my kids use it... so shall I... But there has got to be more....

One of my favorite blogger LaVender Shedrick at MOMSWEB gave me a great idea.... I taped my daughter and her friend dancing to Dance 2 on the Wii - it was amazing... What a work out.. So my goal is to do normal workouts - like walking - visiting the club.. but I'm also going to (in the privacy of my own home when NO one is looking) try working out on the Wii... and when I reach my goal... I will post my video of the work out to Dance 2... LaVender said that she would like to see me do it and was giggling thinking about it... I have to laugh out loud... cuz it would be a funny sight to behold......

Here is the work out/ dance routine that I will Master... for all to marvel and laugh with me... Oh, the strange guy on the left in the back is my husband - he cracks me up... He had no idea I was video taping - he thought I was taking pictures... Ha

On A Quest To Lose Some Poundage...

I was married on February 11, 1989... On that particular day - my waist was 21 inches.. I weighed 105 with my clothes wet... I wore a size 2 in most clothes and I thought my thighs were fat.... Now several years later... let's just say.. I'm not that size any longer... Not even close.... About 16 years ago I became hungry and my appetite hasn't gone away... and neither have my thighs..... not by a long shot!

You never really know how big you are until you see a picture of yourself with people you thought were fat and you are the biggest one in the bunch... or when you go to the movies and both sides of the seat are pressing down on your sides... Then you know it's time to do something.... It's WAY past time to be doing something.... so Here goes...

I am taking my girls on an adventure this summer - we are flying from sunny California to Washington DC, Manhattan, and Boston... We are going to spend over 2 weeks exploring American history... and walking... and walking.. up hills... down hills... and the state my body is in right not - it'll kill me... especially if you throw in the heat and humidity that the East coast is known for in the Summer time... well you get my point.

I spoke to a nutritionist about Slim Fast and she said that it's one of the healthiest and fastest ways to lose weight... She said that the shake has all the vitamins and minerals I really need but to make sure to add fruit and vegetables to my menu.... Yesterday was day 1 and I made it - wasn't too sure if I would... Around 11:30 PM - the leftover pizza from the girls dinner was calling my name or was it the caramel topping.. I'm not sure... but instead of indulging - I made a cup of hot tea and went to bed......

Yesterday's menu consisted of:
2 shakes 190 calories each
2 slim fast bar snacks 120 calories each
1 banana
lean cuisine spaghetti dinner around 300 calories
total intake: 900

I plan on adding some exercise into my daily routine... walking and the Wii... I'll keep you posted...

This is a picture of my youngest daughter Kara and her gymnastic team when she was competing in gymnastics. She loved the sport until it became a job.. Training up to and beyond 20 hours a week... It amazes me how much the coaches expected from these little and very talented girls... She was in the 2nd or 3rd grade in this picture...

She won 2nd place in all the events and won 1st place in All Around... She is very competitive and this was a very good day...

This picture is from our family trip to Yellowstone National Park. I did not know until my visit there that there are many geysers and springs next to Old Faithful... There is a large wooden walkway around all the different geysers and springs... the smell of sulfur is so strong that it made my eyes water.... This particular picture is the "Ear Spring"... Can you figure out why????

This is was great trip about 21 years ago - My husband's parents treated the family (before kids) to a trip to Cabo San Lucas for fishing and fun... We caught a bunch of Dorado Fish and a huge Blue Marlin - we had the fish frozen to take home... Yummy... At night we went partying.. This is my mother in law enjoying a little Sangria at Squid Ro... Fun was had by all...

This was one of the pictures taken from Nikki's 5th grade science project - The idea was to find out what Coke could do - I was very impressed... Did you know that Coke can clean the bathroom tile grout? It can! Really... It also makes a great marinade for a ham.. It did not take a grease stain off our neighbors driveway... but it did cause a small stain of its own... thankfully it's gone now....

I cannot believe how much Nikki has changed since this photo... She is now a young woman... Time goes by so quickly....

I love scary - our neighbors put on a haunted house in front of their home every year - the past two years - the husband and kids have participated - It's funny - You can hear the screaming all the way down the street... We got a new pet recently... and I am in love.... He is curious.. loves to climb.. he loves watermelon, cantaloupe, rose petals, green leafy vegetables, and drinks water by putting his complete head in the bowl and slurping.... He is over 50 years old.... He is slow and steady and has a stubborn personality... For now he is tucked away in our garage... in a bed filled with newspaper and a blanket to block out the light. I'm looking forward to Spring to spend time watching his antics again....

My family and I have made it a habit to treat ourselves every Thursday night to dinner and a movie. We have done it for five years now and there is not a restaurant in town that we are not familiar with. We all love food and we make a joke about how we are the town's food critics. Each one of us have a very eclectic sense of taste. If you can please all of us, you can please anyone.

When Colton's steakhouse opened in town we were all relieved to see something new. We all got ready, set the home Security Choice security alarm, and we were off. It was amazing to see us all get so excited over a new place to ea t.

When we arrived were were pleasantly surprised with the atmosphere. The food was even better than I had expected. We even found something on the menu that my eight year old would actually eat. The prices were not all that bad either. All in all we were very pleased with our new dining adventure.

Colton's has now become our new favorite place to eat. We usually choose to go there over anywhere else in town. Every time that we go back they have something new to offer. I hope to see more place like this open in the near future that are nearby. Hopefully, this will happen soon before we wear out the menu there.

Dusty's Chili Rellenos

Preheat oven 350 Casserole 9 x 13

4 eggs, beaten

1/2 tsp salt

1/2 tbsp generous flour

1 can evap. milk (soup can size)

Mix the above in a bowl

Layer in 9 x13

Flat chilies (clean and soaked)

1 lb jack cheese

Flat chilis

1 lb cheddar cheese

Pour egg mixture over dish

Bake 30-35 minutes

top with your favorite enchilada sauce

Bake 5 minutes or more until sauce is hot..

I really like Single Ladies - By Beyonce.. It's a catching tune that just makes you want to jump up and dance..... I have seen many cute videos of babies bouncing to the song.. I have seen You Tube videos of many walks of life enjoying this catchy song.. I have been known to break out into dance listening to Beyonce wanting a ring on her finger... to the complete horror of my girls...

I recently saw this video of young girl dancers... These kids are talented and amazing... But - I'm not sure if I would allow my kid to be this sexy at their young age.. What do you think?

Dancing Queen - That's Me....

Way back when.... I used to love going to the clubs with my friends... Almost every weekend - you could find us dancing to our favorite 80's hit on the dance floors... Those were the days of big hair, bright colored outfits, and big hoop earrings... Those were the days I was a Dancing Queen...... or so my kids call it... The days when mom was young and skinny... ouch...

As a mom of teenagers who are now embarrassed by any public signs of affection... or anything that could be construed as different... I take great pleasure in embarrassing them in a not so public way... I could do the slightest silly thing with no one around but because we are in a "public" place like Target for instance - my eldest goes insane.... It's hilarious... So the other day.....

We were at Target.. (my favorite place to shop) and there was board - that you can play sample music on... and Dancing Queen was one of the songs.... All of a sudden - I broke out into song and danced in the aisle (no one was around) The girls were mortified... they took off down the different aisles just to get away from crazy lunatic mom - who bursts into song at the slightest provocation.... I could hear them giggling so I knew all was okay... When the song and I were done we continued on our merry way... I'm thinking - no one saw me.. and that was fun until.....

One of the managers I knew very well saw me in the checkout... He had this huge grin on his face.... We hugged and kissed and asked how each other was and then he said it... "Thanks for show - you were great!" Unknown to me - I was near a security camera and the entire performance was caught and watched by many... Thank goodness they couldn't hear me... I am sure my face turned about five shades of bright red.... I'm thinking this time.... I was the victim of my own outrageous-ness...

Last Sunday's coupons offered - buy 1 get one free on Tampax tampons, Always pads, and feminine wipes... What I love about Target is the sales they offer... So not only did I get 3 free boxes - I got a gift card for $5 for buying two boxes... Net price for a box of Tampax $1.00... Each box was $6.00 for a total of $12.00 - one box free (-$6.00) and a free - $5.00 gift card = $1.00...

I was so happy to be making the deals of the century - until I got THE advertisement - it wasn't even a coupon..... and at the bottom of this advertisement for Always Maxi pads was the statement that turn ALL women completely INSANE.....

My new man is Casey James - The contestant on American Idol... This young man caught my attention on his first audition and last night he caught my heart... There is some amazing talent in those vocal cords and his eyes.... his eyes.. just makes this mom melt....

Top 5 Ways For Me To Relax

I was looking in the mirror yesterday as I was driving home (before the earthquake) and I was talking to my daughter on my cell (yes, I have an ear piece) - with the sun shining down onto my head - I thought I saw a glimpse of a gray hair.... I ran my fingers through my hair and there it was! I yanked it out from the root... What I found odd was that at the end of the hair where my "natural color" was it was nicely textured with a small curl to it... Where the gray was - the shaft of the hair was thicker and just plain awful... I am WAY too YOUNG to go GRAY... no way - not me... Nope - nothing doing...

I began to realize that I am getting old because I am a complete stressed out MESS..... I need to relax... breathe in... breathe out.... So I came up with a list of 5 things I am going to do this week to relax me... to make me feel good.. and to make me feel Young... again...

Get in the hot tub every night and let the hot bubbling waters soothe my achy muscles.
Get my hair done - cut, color, and style... No walking out with wet hair to save a buck!
Get a pedicure and have my feet get that extra 15 minute massage...and paint my toenails Red.
No Television or Computer after I'm done for the day - stop checking for work messages
Light all my favorite candles - play my favorite music and just be still.... at least for longer than a minute!

Yes, I love my family.... Yes, I do... I really really do... But.. I cannot begin to tell you how excited I am for my space.. My Kelly Time.... You see, my husband decided to fly himself and the kids up north to spend six (6) count them SIX glorious nights with his parents.... I was not able to go sigh..~~NOT~~... I still need to run my business and it has been extremely busy lately... So

I called my friend the other day and asked her what her plans were for Easter vacation - she was in a pretty bad mood - you see, she is stuck here in Southern California on business and will not be able to return home until the end of next week.... Can hear my wheels turning....? I'm thinking... she's thinking PERFECT TIMING!!! Needless to say - she's a happy camper and so am I.... We get to have fun - no husbands... no kids.. no obligations (except for work) but regardless of what we are doing... we Always have a good time....

I can not begin to tell you how stressed I have been lately.... I have my dozen or so balls up in the air and praying like crazy that one won't drop.... Now that the husband is searching for a new job (things are looking pretty good already) - he is under foot... Working from my home office for the past fourteen (14) years - I had gotten used to "my space".... When I am into a file working - my concentration is so absolute .. so focused... that when he bent over to nibble on my neck - I jumped about three (3) feet and bonked him in the forehead OUCH! I really really need Kelly Time...

So, picture me - making plans... laughing hard.. reminiscing... getting into "trouble".. and missing my family...

One of my favorite TV shows was Buffy The Vampire Slayer - I know it was cheezy - but in that cheese I found some interesting story lines - okay maybe the one with the Preying mantis eating the students wasn't one of the best and okay the Hyenas not so great but there were many shows that I thought were pretty good.

The Best Show I believe was Buffy The Vampire Slayer the Musical - the lyrics - and music I thought were great - funny... and believe it - thought provoking. The premise of this video is this:

Buffy died and her witch friend, Willow cast a spell and brought her back to life several months after she was gone.. Her friends did not understand why she was not happy to be back until it was revealed in this song.... deep..

Many years ago - Dusty and I went on a seven day cruise to Mexico. We were celebrating our three year anniversary... We boarded the ship in San Diego - a cruise line named Commodore Cruises - I don't think they are around any longer... The ship was old and smelly... We drove through one of the worst rain storms in California history to get to the ship - we drove close to 100 miles.. When we arrived at the terminal - I noticed right away that everyone was old... When I say old - I mean going along in their walker and wheelchair old..... I wanted to cry.....

The first night - we sat at a table with four (4) senior citizens - Dusty and I were still in our twenties and had nothing in common with these very nice people... Later that evening - we went out onto the deck so I could smoke a cigarette ( I have since quit). As Dusty and I were chatting outside - we noticed another couple about 100 yards away from us - a couple with dark hair - a couple under the age of 40.... The other couple noticed us at almost the exact time as we did them... We walked towards each other.... The rest of the cruise was hilarious... We had the best time... We hired a taxi driver to give us a tour around Puerto Vallarta - somehow in our enthusiasm a few other young couples found and joined us... In the other ports of call - we found fun and adventure - memories that still make me smile and laugh out loud.....

That first night on deck - I met my best friend in the world.. My soul mate - Now 18 years later - she still is a major part of my life... She is the first person I call to share good and bad news... We started our families at the same time... We had our children around the same time.... We shared in the loss of parents.... We cried together in laughter and in pain.. She's my Vegas buddy... She gets me when few do....

A few years ago - she moved away to Colorado.... My kids and I visited her and the family summer before last - I fell in love with where she lives.. The wildlife, the seasons, the people, the majestic Rocky Mountains within a hours drive.... Since that summer I have dreamed of moving to CO.... Wouldn't it be nice to be neighbors? I miss my friend...

As you know - Dusty was laid off a couple of weeks... hmm - What a great idea to move, don't you think? I've been writing my list of reason on why we should move to CO.... Friends, lots of family, get a bigger house and pay cash - (of course, I've been showing him what we can get on realtor.com).. oh the possibilities..... and I think maybe.... just maybe he might be receptive to the thought.... a girl can dream....

Getting The Message Across

One of the best ways to get your message across is to wear it. I personally love customized-t-shirts that says what I am feeling on a certain day... Telling the world what I support... What I love... What I love to do.... It's also a lot of fun to get matching food t-shirts... Recently - I went to the Melting Pot - this is a little restaurant that cooks everything in pots at your table.... My girlfriends and I decided that next time we go - we are going to skip the dinner portion and go for the chocolate fondue.... Wearing one of these shirts - would be fun, don't you think?

My sister is one of the millions of people who suffer from MS this spring on April 10th - she along with family and friends will be walking in the National MS Society Walk Event - wearing a t-shirt that makes people aware about this dreadful disease is another way to get the message across... There are so many causes out there that need our help.. . Breast cancer... Organ donation.... just to name a couple..

According to T-shirt on Wikipedia - a t-shirt is an excellent way to express yourself - to get your message across.. We live in a country where Freedom of Speech is promoted... So go visit www.CafePress and find your voice.... or your chocolate...

I have so many quirks and narrowing it down to just 3 is a toughy.... hmm

When I go to the mall - I avoid the fragrance department at all costs - I can't stand people trying to squirt me...
When I get a box of chocolates - I cut each chocolate in half. Mostly because there are only about 2 candies in the box I like and I want to find it and not bite into something gross like coconut or that pink stuff.. and an added bonus is that I know it really annoys my husband...
When I read - I lick my finger when I turn the page - I did not know I did that until my youngest was reading her book when she was 2 and she licked her finger when she turned her pages...

I was driving my girls around the other day and the Pina Colada song came on - for those of you that are were born before 1970 - you probably would remember this song playing on the radio a hundred times a day.... - it was a top hit in 1979. Anyway, my girls are listening to the song and they ask me if I like the song... I was singing the song ~~off key~~ and of course I said yes.... and then my youngest asked me what the song was about... Picture me as a deer caught in the headlight Oh my -

My husband is a practical joker - I never know what's going to jump out at me.... I'm a creature of habit... Every morning before I can do anything - I have to have my cup of tea - I heat the water in the microwave and because Dusty (the husband) knows me so well - he gets me every time... I have had stuffed snakes - fake spiders - you name it - it's probably jumped out at me.... April Fools day is his favorite holiday...and yes, I do mean holiday.. My friends can attest to some pretty good ones he has pulled on me.

One year he set all the clocks in the house, my car, and my watch one (1)hour ahead - so when I woke up - I assumed the girls and I were an hour late for school... I rushed them getting dressed - shoved the cereal down their mouths and jumped in the car breaking all kinds of speed limits only to arrive at an empty school - it was empty except for the before school childcare - I walked into the childcare area - I looked around and I asked my friend who worked there where everyone was... she looked at me like I completely lost it and then her face breaks out into a smile and she starts laughing... I mean laughing really hard.... and she said - oh, Dusty got you good this time.... it was 7:00 am.... Last year, he took all my right shoes out of the closet and hid them and I have a lot of shoes.... picture me on the ground in my closet trying to find a matching pair.... yep it took me a good 20 minutes to figure that one out..

This year I want to get him and I want to get him really good..... any ideas?

Stuffed Bell Peppers

This is a easy and very tasty recipe - enjoy

Stuffed Bell Peppers

Preheat oven 400 degrees

Ingredients

8 Bell Peppers
1 lb ground beef
2 tsp chili powder
1/4 tsp pepper
1 1/2 cup cooked rice
1/2 lb sharp cheddar
1 cup onion chopped
1 clove of garlic, minced
1/2 tsp salt
2 cans condensed tomato soup
(1 cup chopped tomatoes optional)

Brown mean and onions: add seasons and soup. Simmer 10 minutes. Shred cheese; add and cook only until cheese melts. Add rice and cool. Stuff peppers that have been parboiled 3 minutes. Place in pan and cover with foil. Bake 25 minutes.....

I love 1 dish meals...

Wave Hit Cruise Ship

I have been on over a dozen cruises and every time I go on one - I can't help but think of The Poseidon Adventure - you know the movie where that huge tidal wave flips the cruise ship... Yes, I know I am paranoid - the husband tells me every time I cross the plank to get on board.

Yesterday three huge waves hit a cruise ship off the coast of Spain - 2 people died and several injured... One minute passengers were sitting in the lounge enjoying their vacation - the next minute a huge wave crashed through the window - spraying glass everywhere - below is very raw footage of the event... crazy...

Not so paranoid now am I, honey???

When Carrie Underwood came out with this song I had to laugh - why? Because the only thing I could think when I heard the song was been there.... done that... Granted it was a really long time ago - way before I met my husband.... But heart break in a relationship can bring out the worst in people... I think there was lesson learned by my ex - to make sure that when he decides to cheat - make sure that his girlfriend's best friend isn't there..... and the lesson I learned was don't give your heart away so easily.....

Today it is rainy in Southern California and nothing is better on a cold wet day is hot soup. This recipe was given to me by a friend that owned a Mexican restaurant in Long Beach, CA. She and her husband recently retired and closed their successful business after 40 years.... I hope you enjoy this - I know I do....

Ingredients

1 green bell pepper coarsely, chopped
1/2 tsp garlic powder
1 small whit cabbage, coarsely chopped
1 tomato, diced
1 onion, coarsely chopped
4 carrots cut into 1/4 inch slices
4 medium zucchini cut into 1/4 inch slices
1/3 cup chicken base
1/2 tsp salt
1tsp oregano leaves
1 1/2 gallon water
6 corn tortillas cut into strips
8 oz grated jack and cheddar cheese
2 avocados.

Preheat oven to 400 degrees

Spray cookie sheet with vegetable cooking spray -Bake cut tortilla strips in oven for 10 minutes or until crisp, set aside. In a large pot add water, chicken base, and cook over medium heat until it comes to a boil. Add carrots, garlic powder, salt, oregano leaves, simmer for 5 minutes. Add bell peppers, onions, simmer for 5 minutes. Add zucchini and simmer for 5 minutes. Add cabbage, tomatoes and cook for an additional 5 minutes. Divide soup into bowls and top with tortilla strips and sprinkle with cheese. Garnish with sliced avocado.

Serves 10-12
